National taco day!

I have been teaching my son to cook gradually as he has gotten older and more recently he has offered to help and learn a bit more.

So since it is national taco day this Wednesday we are making tacos with little help from Mom and more all on his own. I think teaching kids life skills such as cooking and doing their own laundry and other chores is vital and important (age appropriate of course). So here is the recipe for my homemade tacos.

Ingredients

1 teaspoon of each listed

minced onion

chili powder

cornstarch

ground cumin

red pepper flakes

cayenne pepper (optional)

minced garlic

oregano

1/2 teaspoon of salt & pepper

2 lbs ground beef

2/3 cups water

Mix minced onion, salt, pepper, chili powder, cornstarch, cumin, red pepper flakes, cayenne pepper, dried minced garlic, and oregano in a small bowl.

Heat a large skillet over medium high heat. Mix ground beef into skillet when hot and crumble. Cover with lid for 2 minutes. Continue to cook and stir beef until beef is browned, about 10 minutes. Drain the beef and discard any excess grease.

Return ground beef to hot skillet. Pour seasonings and water in skillet and stir. Bring to a simmer (low heat) and cook about 5 minutes.

Put meat into taco shells and top with your favorite ingredients and enjoy.
